En lo alto de los Andes, es la ciudad de Huancayo la que tiene excelente comida y tiene frutas y vegetales de lo mejor. Ingredientes cuidadosamente seleccionados con los chiles más frescos. Prueba esta salsa Peruana o puedes usarla como condimento. Usualmente se sirve con papa o yuca frita.
I love the huancaína sauce, very tasty
My wife boils red potatoes, slices them and tops with Huancaina,sliced boiled eggs and black olives. Great side for an dish. She used to make the crema from scratch, but I like the Alacena Crema better than hers, and its easier than making it yourself. The only problem is that our dinner guest who try it always insist on taking some home with them, so buy extra packages, you'll need them.

For those familiar with the dish “Papa a la Huancaina” and prefer to avoid having to make the delicious sauce that covers the potatoes, and is usually accompanied with boil egg, black olives (Peruvian style) lettuce, well, let’s just say this sauce performs very well but you will have to boil your own potatoes and egg, but pouring this sauce will briefly remind you of what a tasty approach to eating potatoes this unique way. A winner in its own way, that’s for sure, and the taste is there.
