Less tart, less salty, more real chili flavor, and substantial heat that builds slowly and lasts. This is a rich sauce that features fermentation flavors including a big umame full-bodied-satisfying-ness while still highlighting the fruitiness of the peppers. Most other sauces are dominated by acidity and salt with a touch of fruitiness and fairly one-dimensional heat. This sauce has plenty of heat but it has such a complex flavor profile that it balances beautifully with the heat, salt and acidity. I first had this sauce decades ago, in Mexico, I was delighted to find it again here. I am now addicted to this sauce. It's fantastic!
